Springy Weekend

Happy Monday! How was your weekend? We had a pretty darn good one I must say! We had some great spring weather and found some good ways to take advantage of it!

Friday night we decided we deserved a treat so we had burgers and fries at our favorite dive bar in town. Ollie was a happy camper because they also have tator tots and mini corn dogs. We headed home and went for a walk around the block. We probably should have set up a bonfire or something because it was so beautiful, but we have some more yard clean up to do before we’re ready for that. So instead after Ollie went to bed I forced Nate to watch Purple Rain to wrap up my Prince day. The acting in that movie is so terrible, but the music is great and it’s so fun to see 1980s Minnesota scenery!

Saturday morning I ended up needing to work for a little bit filling in for someone at a Green Expo that was being held nearby for Earth Day. I got to show kids what happens when debris is dumped in a storm drain. I was bummed not to be out disc golfing with my boys, but I was able to meet up with them at our favorite restaurant for lunch and it was a nice day so they had the doors to outside open and it was lovely.


Saturday afternoon I met Jen down at the Galleria in Edina. We were most definitely not there to shop (it’s a high end brand mall for those not from here). We were there with one goal in mind. The Unicorn Frappucino. We had to do it for our Unicorn blog. We just had to. Yes we know how much sugar was in it. We bought one and shared (and while it wasn’t terrible, I will admit we didn’t finish it and instead indulged in caffeinated beverages much more to our liking!) And then we had fun checking out these really awesome Art Walls that are painted in the Galleria right now. It’s a project benefiting Free Arts Minnesota, for every picture taken and posted Free Arts gets $5 towards programs that help youth. Pretty awesome.


Saturday evening the boys and I ran to Home Depot to get some wood so Nate could build another garden box in our backyard. He’s going to have more plants this year so he needed to build another box. We had dinner and just kind of vegged. We watched a movie called In A World after Ollie went to bed.

Sunday we had another Easter celebration with Nate’s extended family. It was fun for Ollie to get to play with his cousins, especially his cousin Sophia who just a year older than him. He enjoyed another egg hunt and we once again ate way too much food.


Later in the day we went back to Home Depot for dirt to put in the garden beds. We also made a stop at my sister-in-law’s to meet her baby chicks. Then I made one of our favorite meals (that’s right folks, I actually cooked!) while Nate and Ollie put the dirt in the garden box. And then we all wound down for the evening and before we knew it the weekend was over.

It was one of those really nice weekends, time with friends and family, just kind of taking things as they come otherwise. The weather was perfection. I hear rumblings next weekend’s weather may not be as nice, so I’m glad we enjoyed it while we could!

  2. What surprised me about the unicorn frappuccino was that it doesn’t actually have that much more sugar than any of my usual drinks. YIKES! I still haven’t tried one because it seems like a lot of sugar for something that apparently tastes like a creamsicle but isn’t one.

    You never said what you cooked though, so I remain dubious :p

    1. I know, it made me think twice about what other drinks I’m having too!

      I actually thought of that, I should have been snapping or Instagramming it as I was cooking. Pics or it didn’t happen! I made shackshuka, aka tomato stew with egg.

  3. It sounds like you had a great weekend. The unicorn frappuccino looks pretty, but I haven’t tried it yet. I heard that it’s a bit sour and has tons of sugar in it.

    Purple Rain…yes, the acting is awful, but I still get teary-eyed. I am not sure there was ever a better soundtrack.

  5. Mini corn dogs yum!!! I’m hoping to stop by Galleria on Wednesday, but I won’t have a photographer with, so hopefully random strangers will help me out?

  6. Sounds like a great weekend. The weather was really nice here too, so we ate outside at a Mexican restaurant on Sunday. We used to have a bunch of garden boxes at our old house, but we haven’t tried it here yet. Maybe I’ll show this to my husband for some inspiration. Hope you had a great Monday too.

  7. That does sound like a nice weekend! We had nice weather here too–isn’t that the best when you can actually go outside on the weekends! Bummer you had to work though, but it’s nice that you got to meet your boys for lunch. I think I’ll skip the Unicorn Frap–it just doesn’t sound like something I’d like (give me all the coffee/chocolate flavors, not so much fruity/candy ones). But the snapchat filter looked fun 🙂

    1. The yucca fries are the best! They’re one of my son’s favorite things too, although he also loves their creamed spinach – one of the only ways we get him to eat veggies!

  9. Looks like you had a great weekend! (Sorry I am a tab bit late to the party this week!). I did not try the unicorn frap but part of me knows it was the best decision and the other part keeps reminding me how pretty it could of been to photograph. Darn the blogger in me! Also, any place that serves tatertots is okay in my book. I have been on a major tot kick lately. Not the healthiest choice but I LOVE them!
